Learn how to make paleo waffles using no almond flour. 4 different waffles: basic plain waffles, protein packed waffles, cocoa waffles and spinach waffles.

Never thought this would happen but yesterday as Gary was heading out for work our garage door wouldn’t open. Both of our cars were parked inside. He was able to take Michelle’s car into work. Luckily we didn’t have any urgent plans that morning. We are renting the home we are in and let the landlord know about our issue. We were able to get an electrician to come out later that morning to fix it. Yay. Now we have a fully working garage. Something I won’t take for granted again.

Seems so silly but when you can’t access your car it kinda freaks you out.It’s funny how you can take the little things in life for granted like garage doors working so you can get to your car. Who would have thought you wouldn’t be able to leave your house due to garage doors not opening? Has this happened to you before?

In our home welike to be preventive about things when we can but find it difficult to do with certain things like garage doors.

Today’s recipe has nothing to do with garage doors. It has everything to do with our obsession with waffles!

If you’re new to purely twins world you might have noticed we love plantains and we make a lot of recipes out of plantains.

We love making plantain waffles because it makes making our plantain bread super quick. As using the waffle maker cooks faster than the oven. The biggest reason why we tend to make waffles more over our bread–the time factor. #truth

We eat these waffles a lot. Like A LOT. Just about every day.

We are okay with that. It works for us and makes us happy.

We love them so much we had to share with you how we make them. Most of the time we enjoy some form of waffle for our post-workout meal.

These waffles are easy to make and easy to digest, which makes them great for others that are busy and want a quick healthy meal. We enjoy these waffles usually for lunch or dinner.

These waffles can be made sweet or savory. We have enjoyed them all different ways as you saw in the video. We like topping them with different things – all depending on our mood.

Few notes about the ingredients.

You can use plantain flour or another flour for the plantains if you can’t get access to real plantains. One note about plantain flour – it does provide a little bit more dense and chewy texture and it works best with eggs.

If you want to follow the protein waffle you can use any protein powder of your liking. Make sure it is one you like because you will taste it. You could also try to use gelatin (green bottle) if you like.

If you want your waffles sweet make sure to use more ripe plantains (which will also make the waffles softer in texture) and add in a few drops of stevia or 1 tablespoon sweetness of choice.

We sometimes like to add in coconut flour to provide a softer texture. It is optional.

The chocolate waffles are more “milk” chocolate like not a rich chocolate waffle.

We don’t put sugar in our waffles therefore the texture is not crispy as traditional waffles.

Basic Waffle

  • 200g plantain, peeled (7oz)
  • 4 eggs
  • 12 tablespoons coconut oil
  • 2 tablespoons coconut flour (optional)

Protein Waffle

  • 200g plantain, peeled (7oz)
  • 4 eggs
  • 12 tablespoons coconut oil
  • 1/4 cup protein powder

Green Monster Waffle

  • 200g plantain, peeled (7oz)
  • 4 eggs
  • 1 tablespoon coconut oil
  • 1 tablespoon tahini or any nut butter
  • 2 tablespoons coconut flour
  • handful of spinach, about 1 cup

Chocolate Waffle

  • 200g plantain, peeled (7oz)
  • 4 eggs
  • 2 tablespoons coconut oil
  • 3 tablespoons cacao powder
  • 1 teaspoon cinnamon or vanilla (optional)

Instructions

  1. Heat waffle maker.
  2. Peel plantain.
  3. Place plantain and remaining ingredients (depending on what recipe you follow) into a blender.
  4. Blend waffle ingredients in blender until smooth.
  5. Pour batter into waffle maker and let cook according to manufacturer recommendations or how you like your waffles baked.
  6. Remove once done and enjoy with favorite toppings.
  7. Top with sweet or savory toppings.

One great thing about these waffles is that they don’t take a lot of ingredients to make and they are nut free.

These aren’t like your traditional waffles where you addsugar and milk (or buttermilk). We omitted those ingredients as we wanted to use as little ingredients as we could. Less is more, right?
