I love JELLO. Even more than I love JELLO, I love making things with JELLO, like this super easy Orange Easter JELLO Pastel Cookies Recipe from Kraft!

I started making this JELLO Pastel Cookies Recipe a few years ago for a Christmas party and now I just switch out the flavor of the JELLO depending on the holiday or event that I am baking for.

I had never tried using orange JELLO before, but after having a serious craving for a Creamsicle last night - and not having access to a Creamsicle - I decided to switch things up and see if I could make an orange cookie!

I have always loved this JELLO Pastel Cookies Recipe, but I have to tell you, adding orange JELLO just took it to a whole new level of deliciousness!

Of course I made cherry JELLO Pastel Cookies too, because what fun is Easter with out pink cookies?

Answer: Not much fun.

You can serve these up in cute little Easter dishes for your guests at Easter dinner!

Ingredients

  • 2 packages 4 servings each JELL-O gelatin mix
  • 3 sticks butter softened
  • 1 egg
  • 3.5 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 400 degrees.

  • In a large bowl, or the stand of a kitchen mixer, beat butter until creamy and smooth. Add in sugar, vanilla and one package of the JELL-O and beat until light and fluffy. Add in baking soda and flour, beating at medium speed until you have a thick, crumbly dough.

  • Roll dough into one inch balls and slightly flatten with the bottom of a glass. Sprinkle the tops with the leftover JELL-O mix.

  • Bake for 6 minutes, or until edges begin to turn golden brown.

  • Remove to cooling racks, or a kitchen counter lined with parchment, to cool.

Substitutions:You can easily substitute sugar-free JELL-O mixes for the regular and the results will still come out fantastic. I have tried subsituting Splenda and other sweeteners in place of the sugar (I have a Type 2 Diabetic father) but they never seem to come out quite right!

You can also substitute coconut oil for the butter to make it a little healthier. Just don't use extra virgin coconut oil, as it will lend a coconut flavor to the cookies.
