Let me begin with this. These vegan no-bake peanut butter bars are AMAZING.
If I could live off these for the rest of my life, I would. Words don’t even begin to describe the ooey gooey, peanut butter chocolatey deliciousness that these are.
Make them, that’s my advice. You won’t be disappointed.
These are so decadent it’s hard not to eat the entire batch in one sitting. They are low in sugar, however not verylow in calories nor fat. It’s all healthy calories and healthy fat though.
These are around 150 calories a bar or 4 Weight Watcher PlusPoints.
They not only do they pack an explosive amount of flavor but protein as well. They also contain the good healthy fats that we need in our diets.
Actually the reason why I like vegan butter, it’s olive oil butter spread. I get the non-soy version.
Then with the almond meal you get a boost of protein and another dose of healthy fats. Yum!
In my humble opinion everything is in moderation. These lasted a little over a week in my house (total self control) I would eat one when I had a good day of eating and stuck with my meals.
You need to give yourself those moments. If you eat strictly vegetables and fruits everyday it would simply be boring and you would want to give up and binge.
For example, my husband and I had date night this weekend. We went to a nice brewery and we both had a local cider which was totally delicious. But, we still were conscious of what we were eating.
I got myself a huge salad and some soup and we split the fries that came with his chicken tacos. It was so nice just being in his company.
But instead of our normal ‘old’ routine of we are out so might as well go all out. We ate those things in moderation and enjoyed it. Love when I get the hubs all to myself. 🙂
It still amazes me that 6 months ago he just returned from being overseas for way to long (7 months).
It always amazes me all the emotions that turn up from a deployment. You build your own life without them (because you have to) to make it through those months alone.
Trying to pack an entire day or a couples days into one hour of speaking to each other (You always forget to tell them SOMETHING). There are so many fears that bubble up, if you’ll be able to stand each other when your back together or you’vebecome so different that they won’t accept the new you. This time I made a HUGE change.
This journey. Taking care of myself by exercising and eating healthy is the best thing I’ve ever done.. EVER. Him returning made me realize he’llwill love me no matter what. Plus, all those fears are wiped away as it always returns to normal like he never was gone.
He will also always be my rock and best friend no matter how far we are from each other. It builds an appreciation for each other and those small dinner dates where you get to enjoy each others company become even more important. My tip for the day: Life is to short to take each other for granted, take your loved one and hold them tight as long as this life allows it. <3

Ingredients:
- 3/4 cup ground almond flour
- 2 Tablespoons cocoa powder
- 1 Tablespoons maple syrup
- 1 Tablespoon veganbutter
- 1/2 cup creamy natural peanut butter
- 3 Tablespoons maple syrup
- 1 Tablespoons vegan butter
- Pinch of sea salt
- 1/4 cup cocoa powder
- 1/4 cup melted earth balance spread
- 2 Tablespoons maple syrup
Chocolate Crust:

Directions:
- 1. Line a loaf pan with parchment paper.
- 2. In medium bowl, stir together the ingredients for the chocolate crust.
- 3. Once combined and forming a moist dough press the dough evenly into the bottom of the loaf pan and place in freezer to set. (10-15 minutes).
- 4. Prepare the peanut butter filling. Stir together the peanut butter, maple syrup, earth balance and sea salt. I use Krema which has no added salt so if you like saltier peanut butter cups use at your discretion. Pour peanut butter filling on top of chocolate crust and place back in freezer to set (10-15 minutes).
- 5. Prepare the chocolate topping, stir together all ingredients until smooth. With a spatula evenly spread it on top of peanut butter filling and place back into freezer to fully set (30 minutes).
- 6. Cut with a sharp knife into 15 squares. Place in a freezer or refrigerator for storage.
