Aunt Lou here.

When I first branched out on my own, I was terrified to cook. Even when preparing something like Hamburger Helper or boxed scalloped potatoes, I was scared I was going to mess it up. (Who says God doesn’t have a sense of humor in turning me into a food blogger! 😉 )

I actually REALLY like cheesy scalloped potatoes from a box, so I gladly picked up a box of my old favorite for this recipe!

      Hi Margaret!

You could possibly use a box of Au Gratin Potatoes. It would alter the taste a little, but I think it would still work! Enjoy!

My grocery store didn’t offer a 7.8 oz package of cheesy potatoes. The largest I could find is 5 oz. I’ll see what happens.

I am pretty sure you can. However, I haven’t tried it so I can’t say other than to cook it on 350 and check it often to figure out the time. Enjoy!

It depends how well-done you prefer your spuds, but in general, they'll be ready to eat after 4 to 6 hours in a slow cooker. If you use the low setting, which is helpful if you won't be ready to eat anytime soon, they typically take between 6 to 8 hours.

How do you not overcook potatoes in a slow cooker? ›

It's recommended to keep an eye on the cooking time and check for tenderness periodically. Once they are fork-tender, it's best to remove them from the crockpot to avoid overcooking.

Why are my potatoes still hard after an hour? ›

To make boiled potatoes taste better, you can add butter, salt, or other seasonings after they're cooked.

Why aren't my potatoes getting crispy? ›

An overcrowded pan will turn a sauna into a steam bath; Your potatoes will cook, but they'll be soft, moist, and bland like steamed potatoes. Even if you're tempted to save dishes by throwing a mound of potatoes onto one baking sheet, parsing them out over two will give them the space they need to crisp up.

Other acidic ingredients, like wine or tomatoes, can also prevent your potatoes from properly cooking. Baking Kneads explains this is a result of the potato's pectin chains and their inability to soften when they come into contact with acidic ingredients.

How do you speed up softening potatoes? ›

Rinse potato (30 sec). Wrap in wet paper towel and put on plate (30 sec). Put in microwave for about 2-5 minutes and make sure it is nice and soft. Cut into pieces then mash with a fork and mix with whatever you like for flavor (1-2 min).
